Warmer weather and chilled desserts go hand in hand. This weekend I am having my mom and stepdad over for a BBQ. I wanted to create a dessert for us to enjoy after dinner that would feel Spring-like. I have been making this oat crust for all sorts of dessert recipes from protein pie to piña colada bars. It is safe to say that it has become my go-to crust recipe for desserts. I like it because it is full of fiber and taste like cookies, providing a nice crumbly texture for just about any filling or topping. I thought it would make the perfect base to be topped with a lightly sweetened cream cheese filling and fresh strawberries and kiwi. Strawberry-Kiwi Cream Cheese Tart

Strawberry-Kiwi Cream Cheese Tart

Ingredients

  • FOR CRUST
  • 1 c oat flour
  • 1/4 c old fashioned oats
  • 1/4 c cane sugar
  • 1/2 c melted butter
  • FILLING
  • 2 16 oz packages cream cheese at room temperature
  • 1 tbsp vanilla extract
  • 1/3 c powdered sugar
  • 2 tbsp unsweetened almond milk
  • TOPPING
  • 2 c thinly sliced strawberries
  • 1 c thinly sliced kiwi

Instructions

  1. Preheat oven to 350. Grease a tart or pie pan.
  2. Combine oat flour, butter and sugar in a mixing bowl. Mix until combine and moistened.
  3. Press crust mixture into pan using hands.
  4. Bake 20-25 minutes or until light golden brown. Remove from oven. Cool at room temperature.
  5. Using a hand mixer, beat together cream cheese, powdered sugar, almond milk and vanilla until smooth.
  6. Spread cream cheese filling over crust.
  7. Top with sliced kiwi and strawberries. Refrigerate 2 hours. Slice and serve.

What would summer be without an ice cream recipe? And since this is Fresh and Fit, it has to be a healthy yummy frozen dream. Something with fresh fruit, toasty goodness and a light creaminess. That is what you will find in this strawberry banana protein ice cream with toasted coconut. That’s right, protein! You will be adding a scoop of your favorite vanilla protein powder to this recipe. The end result is a light and frosty not heavy ice cream, or icy cream if you will, that you can eat in a cone or right out of a bowl. It satisfies the sweet and creamy craving with a little toasty crunch from the coconut. You aren’t regretting eating ice cream and you are satisfied; a win win if you ask me!

Yield: 4-6 servings

Strawberry Banana Protein Ice Cream with Toasted Coconut

Ingredients

  • 5 ripe frozen strawberries (freeze strawberries 2 hours or overnight)
  • 1/2 a ripe frozen banana (freeze 2 hours or overnight)
  • 2 c unsweetened almond milk
  • 1 scoop vanilla protein powder
  • 4 tbsp unsweetened coconut flakes

Instructions

  1. In a blender, combine all ingredients. Blend until smooth.
  2. Pour into small glass tupperware. Cover and freeze for 1 hour.
  3. Remove from freezer and stir, scraping sides. Return to freezer for 3 more hours.
  4. Heat a small pan over medium heat. Add coconut flakes and toast for 3-5 minutes, until just lightly golden brown.
  5. Once frozen, use an ice cream scoop to scoop out ice cream. Top with toasted coconut.

It’s that time of year again; the days are getting longer and the weather is heating up. We’re all reaching for something refreshing to cool us off. What is more reminiscent of summer vacation than Popsicles? These two delicious recipes for strawberry-kiwi mojito and piña colada popsicles have no added sugar and are much healthier than the store bought ones I grew up eating. Get the kids involved and make them together. They are named after tropical cocktails, but there is no liquor – feel free to add some though!

 

Strawberry-Kiwi Mojito and Piña Colada Popcicles

Ingredients

  • Strawberry-Kiwi Mojito Popsicle
  • Makes 2 pops
  • 1/2 c strawberries
  • 1 kiwi, skin removed
  • 3 mint leaves
  • 1 tbsp lime juice
  • 1/2 c coconut water
  • Pina Colada Popsicle
  • Makes 2 pops
  • 1/2 cup unsweetened cashew or almond milk
  • 1/2 c shredded unsweetened coconut
  • 1/2 c pineapple chunks

Instructions

  1. Add ingredients to blender. Blend until smooth
  2. Pour into Popsicle mold.
  3. Freeze at least 3 hours

Frozen Yogurt Superfood Bars

The weekend is finally here. This is a time where many people fall off their healthy eating plan, let down their hair, and indulge (that’s totally okay by the way). But in case you want a sweet treat to have on hand that won’t totally leave you feeling regretful come monday, these frozen yogurt superfood bars. Tangy, creamy Greek yogurt and fresh strawberries sit on top of a crust with hidden superfoods; chia seeds, flaxseeds, and walnuts.  This recipe isn’t overly sweet and would actually make a really nice breakfast bar in the summertime due to it being chilled, high in protein, and providing ample healthy fats to keep you full.

Frozen Yogurt Superfood Bars

Ingredients

  • 2 c pitted dates
  • 2 c unsweetened shredded coconut
  • 1 c ground flax seed
  • 1 c walnut halves
  • 2 tbsp chia seeds
  • 2 tbsp honey
  • 2 tbsp water
  • FOR TOPPING
  • 2 c Greek yogurt
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 3 c strawberries, thinly sliced

Instructions

  1. Line a 9x13, baking sheet with parchment paper.
  2. Combine dates, coconut, and walnuts in a food processor. Pulse until a grainy texture forms throughout.
  3. In a large bowl, combine date mixture, flaxseed and chia. Mix well.
  4. Add honey and water. Stir once more.
  5. Pour mixture into pan and press down using a spatula or fingers.
  6. Set into freezer while making topping.
  7. For topping, stir together honey, vanilla and Greek yogurt.
  8. Pour on top of base and smooth with a spatula. Arrange strawberry slices on top. Freeze for 2 hours. If freezing longer, allow to thaw 30 minutes at room temperature before slicing.
  9. Slice with sharp knife into 2x4 inch slices.
  10. Bars can be frozen or stored in the refrigerator
