Sometimes a rich piece of dark chocolate is all it takes to satisfy the craving for something sweet. In today’s recipe for superfood dark chocolate and fruit bark we are going to up the ante with a dose of chia seeds and fresh fruit to add a heap of health boosting antioxidants and omega 3’s to the chocolate.

I didn’t realize how truly easy it is to make homemade chocolate bark until now. All you do is choose your add ons and melt some chocolate. let it set in the refrigerator and you have a beautiful dessert in under an hour.

Superfood Dark Chocolate and Fruit Bark

Ingredients

  • 24 oz dark chocolate chips
  • 1/3 c cherries, pitted and chopped
  • 1/3 c blackberries, halved
  • 1/3 c raspberries, halved
  • 1 tbsp chia seeds
  • 1 tbsp unsalted sunflower kernels
  • 1/4 tsp sea salt

Instructions

  1. Line a 9x13 baking sheet with wax paper.
  2. In a microwave safe bowl, melt chocolate chips working in 30 second increments until melted stirring occasionally.
  3. Pour chocolate chips into pan and spread to edges.
  4. Top with cherries, raspberries, blackberries, chia seeds, sunflower kernels and sea salt. Gently press into chocolate. Refrigerate 30 minutes or until solid. Use a butter knife to break into pieces.
  5. Store in airtight container in refrigerator.

Superfood Rainbowl

Who believes that vegetables have to be boring? I certainly do not. I love a vibrant, fresh bowl of real raw whole food – full of color, flavor and nutritional goodness.  Enter the Superfood Rainbowl. Okay, so it’s a fancy name for a salad, really. But when you look at all the colors , it is reminiscent of a rainbow. Rather than plopping all the vegetables in a bowl, I like to take a few extra minutes to make the plate look like a piece of art. Using a julienne slicer, spiral slicer, potato peeler, food processor or mandolin, you can turn a simple salad into something appealing to the taste buds as well as the eyes. Eating involves all of the senses and it is important to remember this when cooking. Try bringing out your inner artist next time you are preparing even the simplest dish!

 

 

 

 

Synergy Cherry Chia Kombucha

                          

I think now is a good time for a product review. And this is a positive one. We often hear about new “Superfoods”, but what are they exactly? Superfoods are nutrient and antioxidant packed foods that provide a wide spectrum of health benefits all different and all from nature. Some are naturally high in protein or electrolytes.  Chia seeds seem to be the latest craze. So I thought I’d do a little investigating and find out what makes them so great. I picked up a bottle of Synergy Cherry Chia Kombucha, which also comes in a wide range of other flavors. The chia seeds make up for most of the drink which touts itself for having 8 times the amount of omega-3s as salmon, more fiber than oatmeal, and more antioxidants than blueberries! Plus, this drink has the supposed power of Kombucha, a fermented tea. Proponents of Kombucha believe it aids in cancer recovery and prevention, can improve eyesight, energize the mind and body and improves digestion with it’s probiotic bacterial strains. I don’t necessarily think this is the go to drink for body builders, as it does not provide very much protein (4g per bottle). But I definitely think it is a great option to keep your digestive system in balance and get some great andioxidants, fiber and heart healhty omega 3s while your at it. Here is the breakdown…
Appearance: Reddish pink , thick liquid, abundant chia seeds
